5 Minute, No Cook- Mediterranean Rotisserie Chicken Bowl


I love to cook but there are some days that the thought of cooking makes me want to curl into fetal position and cry. This is almost always the case the day I go grocery shopping. I have been guilty of spending $200 on groceries, then coming home and ordering pizza. I put a lot of thought into my grocery list and everything I want to cook for the week that by the time I make my list, go to the store, shop, and unload all of the groceries. I have zero interest in putting together a coherent meal. That's where the rotisserie chicken comes in. If I tried, I can make an entire chicken last 3-4 days, butttttt it typically gets gobbled up in one sitting. They're affordable, delicious, and usually not processed with too many weird ingredients.


This is one of my favorite grocery shopping day meals. It doesn't even take five minutes to put together and uses healthy, accessible, and balanced ingredients. The Mediterranean diet focuses on whole, nutrient-rich ingredients and minimal processing. This is the perfect week-night throw-together meal that is completely guilt-free, and wildly delicious! It's the quick and easy recipe of your dreams- no lie, it will take less time to put together than it would take to go through a drive-through!




 

Ingredient Breakdown

  • Rotisserie Chicken- Shredded

  • Canned Artichoke Hearts

  • Spinach or Kale

  • Cherry Tomatoes

  • Olives- I used marinated greek olives

  • Feta Cheese, Crumbled

  • Lemon Juice

  • Oregano (optional)

Other Mediterranean Inspired Ingredients you can add! Use what you have!

  • Hummus

  • Cucumbers

  • Cooked Shrimp or smoked salmon in place of chicken

  • Chickpeas

  • Red onion

  • Avocado

  • Quinoa or Brown Rice
