Happy third week of 2021! And if you ask me, I am already wishing this week would be over. I am sure most of us are anxious about the week to come and I just hope and pray that there will be no violence this week and we can celebrate a new president!! Anyways, I hope I can provide a little distraction this week by offering a recipe for Chocolate Protein Pancakes. Yes- you do not need to fear that these have chocolate in them because the chocolate comes from protein powder!!
Another challenge that I am working on this year is limiting the amount of sugar I eat. Once I started noticing how much sugar I was eating, it was eye opening. For example, I used to eat a lot of dairy-free yogurts, like basically once a day. Once I started reading the labels, I noticed that some of them that I was eating had 14 grams of sugar in the single sized serving container.... like that is INSANE. Then I noticed it on my favorite pancake mix... which is Hungry Jack. I have been eating Hungry Jack for forever and it definitely made me sad when I saw there was 8 grams of added sugar per serving. Having that much unnatural sugar to start your day, does not start you off well. Once I realized that Hungry Jack contains that much sugar, I tried multiple “healthy” brands but none of them tasted very good and they were normally over $6 which is not what I want to spend on a pancake mix. So I decided I would make my own and I am sharing it with you all! My recipe is made from simple and healthy ingredients and the sweetness comes from the maple syrup! (yes this is still sugar and it is not completly eliminated, but it is a natural form of sugar.) Also, a perk of adding maple syrup is that you really don’t need to add it on top of the pancakes. These pancakes are also gluten free, vegan, and nut free.
