Are you like me and have 5 bags of frozen cauliflower rice in your freezer at all times? Just me? Welp, cool. One of my biggest goals for 2022 is to eat more vegetables. How cliche. But honestly, somewhere over the pandemic I literally stopped eating vegetables on a regular basis- probably because there is usually nothing comforting about eating vegetables, and 2020 required a lot of comforting. This soup has been on a severe rotation in our house since the New Year as an easy (and pretty filling) way to sneak extra veggies into our diets.
Ingredient Breakdown
Cauliflower Rice
Fresh or Frozen! I use frozen cauliflower rice every time I make this recipe and it works SO well.
Mirepoix
The combination of onion, celery, and carrots! I buy mine precut because I'll say it again and again- CELERY IS DISGUSTING and I refuse to have copious amounts in my house just to use a little bit in soups and sauces. If you shop at Trader Joe's they sell Mirepoix prechopped- find in the refrigerated produce section near bagged salads.
Chicken or Vegetable Broth
You're the boss applesauce, choose what you prefer. If you choose a low sodium version you will have to add salt to taste later. If you choose a regular sodium broth you may just have to add the tiniest pinch of salt to taste.
Parmesan Cheese
Because cheese makes everything better
Heavy Cream (optional but recommended)
I HIGHLY recommend using heavy cream. It balances out all the flavors and makes the soup that much more satisfying- and it's only 1/2 cup for the whole recipe- nothing belly-busting!
