This simple weeknight dinner is indulgent and flavorful without any of the guilt. One of my goals in the new year is to lower the amount of dairy in my diet- I know, not original at all. I am usually incredibly turned off by anything with coconut-- but I have found that if it's prepared properly coconut milk or coconut cream can actually have a rich dairy-like element without an overpowering coconutty taste!
This recipe comes together so quickly and has minimal ingredients so you won't be spending time slaving in the kitchen!
