Move over breakfast burrito! Call them taquitos, call them flautas, but don't call them store-bought! These Baked (or Airfried) Chorizo and Potato Breakfast Taquitos will have your family requesting these every weekend as they have been in my household! They are super easy, require only a few ingredients, and can be enjoyed with a homemade Avocado Crema, your favorite salsa, or sour cream!
I get in trouble at home a lot because I don't cook enough Mexican food (and for never throwing away my teabag wrapper but telling you that would just feed into the narrative that food bloggers have to write their whole life story before you can get to the recipe 😏). The version of "Mexican" food that I grew up on is a hard shell taco with cheddar cheese, sour cream, and lettuce. The version my husband knew growing up in Mexico (and California) is a full-on feast of meats, salsas, rice, beans, pickled veggies, onion, and cilantro- there is no orange processed cheese in sight. I know I talk about my husband a lot, but he has really helped open my world to at-home food culture- also he's very needy. The ritualistic process of putting so much thought and effort into a weekday meal was a new concept to me- most of mine were frozen and from a box. Now good I love trying to push my boundaries with not only Mexican food but with some of my favorite childhood classics. Here we have the Breakfast Taquitos!
