Would you believe me if I told you that these chicken tenders are paleo & keto-friendly, use absolutely no grain or nut alternatives aka no flour, almond flour, bread crumbs, or anything even close to it? I use two different ingredients that are a little outside of the box but the results are ridiculous. You won't even know these are healthy(ish/er). These puppies are not only paleo, keto, grain-free, nut-free but only use THREE INGREDIENTS (+ spices). You have to try these, you won't regret it. I told you you would never guess. It's Trader Joe's Plantain Croutons!! They are made with four simple ingredients- Plantains, Oil, Garlic, and Salt. Periodt. I have found myself eating these by the handful on their own and the intense crisp of these croutons is what piqued my interest in if I would be able to make these into a breading for chicken. And boy, it turned out much much better than I anticipated. I can't wait to try different cooking methods with these in the future. As you know by now, my body has a really hard time processing refined grains such as flour and bread, so I tend to avoid foods that have a high concentration of refined grains. Many specialty diets like keto, paleo, and gluten-free also avoid these ingredients so this is a very well-rounded recipe that can be enjoyed by all!


 





My second weird ingredient for the success of this recipe:


Please hear me out before you write me off completely. The logic behind this makes a lot of sense if you break it down. It's mayo, okay? For all of you mayo haters just listen: mayo is comprised of two main ingredients: eggs and oil. Think about how you would normally bread chicken for frying- it usually involves some sort of egg bath then into the breading mixture. You also need oil to create the ultimate crisp. So why don't you skip a couple of steps and just put a light mayo layer on before breading it. While I haven't tried it yet, I feel like this would be the perfect combo for the airfryer.
