Crispy Chorizo Tater Tot Nachos (Totchos)


Tater Tot Nachos-- totchos, if you will! Here's the deal- crispy outside, soft pillowy inside, covered in an ooey gooey cheese. THEN you get to choose your own adventure with toppings! Do you want tomatoes? GREAT, toss them on that thang. Not feeling green onions? Toss them right in the trash. Or if you want me to tell you how to best enjoy this tatertotcasserole, throw it all on there and eat it straight out of the pan with a fork. Now, if you are asking yourself what is chorizo? Don't worry- I have you covered. Chorizo- specifically Mexican Style Chorizo is a perfect breakfast sausage with traditional Mexican spices! This totcho recipe uses Mexican chorizo that cooks more like a ground beef and is perfect recipe for tater tot casserole.




 

Ingredient Breakdown for Crispy Chorizo Tater Tot Nachos (Totchos)


  • Frozen Tater Tots

  • Mexican Style Pork Chorizo

    • This comes raw and uncooked and only uses one tube of chorizo. Chorizo freezes well and adds so much flavor without having to season it! See below for a full explanation!

  • Mexican Style Cheese

    • I chose a thick cut variety for the ultimate meltability.


Toppings of Choice! As many or as little as you'd like!

  • Diced Tomatoes

  • Green onions

  • Fried Egg

  • Sour Cream

  • Salsa





 



What is chorizo?

  • Chorizo is sausage typically made from pork that is heavily seasoned. The preparation of chorizo can vary by region. In Europe it typically is sold cooked, fermented or smoked and ready to eat. Mexican style Chorizo can come in many varieties, colors and spice levels. In the US, Mexican style chorizo usually comes cased in an inedible plastic casing and is raw. Think of it as a taco seasoned Jimmy Dean's breakfast sausage

  • I am going to do my best to describe how to blob out chorizo from it's packaging. Start by cutting off the tip of the plastic packaging. The chorizo will easily squeeze out (think toothpaste). Start by pushing from the bottom so it starts moving up and out. When you get enough out of the tip to form a blob pinch and twist so the blob blobs out onto the tater tots. Get blobby!
