What is chorizo?
Chorizo is sausage typically made from pork that is heavily seasoned. The preparation of chorizo can vary by region. In Europe it typically is sold cooked, fermented or smoked and ready to eat. Mexican style Chorizo can come in many varieties, colors and spice levels. In the US, Mexican style chorizo usually comes cased in an inedible plastic casing and is raw. I am going to do my best to describe how to blob out chorizo from it's packaging. Start by cutting off the tip of the plastic packaging. The chorizo will easily squeeze out (think toothpaste). Start by pushing from the bottom so it starts moving up and out. When you get enough out of the tip to form a blob pinch and twist so the blob blobs out onto the tater tots. Get blobby!
