Dairy-Free Spinach and Artichoke Bean Dip | 6 ingredients | 5 minutes | Vegan | Addicting

Spinach and Artichoke dip is the epitome of an indulgent party dip! You still feel semi-healthy and won't be overloading on acne-inducing dairy! This recipe replicates the creaminess you would usually get from cream cheese and sour cream with blended beans! This Dairy-Free Spinach and Artichoke Bean Dip is one of the most quick and easy recipes to throw together for that dinner party you're not prepared for! It is not only dairy-free but vegan, only has 6 ingredients, comes together in 5 minutes, and is INSANELY ADDICTING! Even better, because by now you know I'm a Trader Joe's Hoe, all of the ingredients used in this dip are from Trader Joe's (and we usually have all of these ingredients already in our pantry at any given time- they're so versatile!)

Beans. You either love them or you hate them. I used to think I hated them but here we are. I now eat beans multiple times a week. It all started with baked beans, which I consider the gateway drug in the bean world. Who doesn't love beans smothered in barbecue sauce and pork seeping into their hotdog bun on a hot summer day? This recipe is nothing like baked beans though. Sorry for leading you on. This dairy-free spinach and artichoke bean dip utilizes white kidney beans (aka cannellini beans). They blend together smoothly and can easily be swapped for other white bean variations- I bet this would be great with chickpeas too!

Just a 1/2 cup of cannellini beans from Trader Joe's alone provides a whopping 10 grams of fiber and that doesn't include the fiber from the artichokes or spinach! Luckily, I feel like my body has built up to tolerate a high-fiber diet. What a better way than to be deliciously helping your body with its digestion!

Tools Used:

  • this lil baby is AMAZING! This is another kitchen tool that we use on a weekly basis. It sits about as tall as a bottle. It stores easily in our cabinet and the bottom container can completely seal and be used as food storage in the fridge! It is the perfect size to make a bowl of salsa, chop an onion, or make this Spinach and Artichoke dip!
