Vegetarian-friendly, dairy-free, wheat-free, keto, and paleo Zucchini Noodle Curried Ramen!
This recipe is so versatile- I made two versions of this dish at the same time without any extra hassle! A zucchini noodle version for myself and a regular ramen noodle version for Daniel! It comes together so quickly and is a cozy comfort food!
Grocery list
-Red curry paste (This is the brand I used- this is a massive tub- you can find smaller jars in the Asian aisle at your local grocery store)
-Broth or stock of any variety
-Ginger
-Mushrooms
-Carrots
-Zucchini Noodles** see note
-Jalapeno (optional)
-Coconut milk (optional for creaminiess)
**alternatively you could make this with a packet of regular ramen noodles. Discard the flavor packet and cook noodles to package instructions inside the broth.
