Red Wine Beef Stroganoff, delicious and healthy comfort food

What in the world was the craze of using 5 different insanely processed cans of condensed soup to make casseroles? Beef stroganoff is one of my most favorite comfort foods. My mom is half Russian so this was a dish she ate frequently as a child and in turn, made for us a lot growing up. Her version often included cans of condensed soup and not a lot of thought- which was pretty normal for back then trying to wrangle three energetic kids with not a lot of passion for cooking. In making my stroganoff as I do, I took a different approach. Breaking down the ingredients that she usually used in her version and chose a more natural, less processed (read: no cans of Campbell's soup), just as easy approach. This recipe is generally enjoyed with egg noodles, however, you can put it over mashed potatoes, polenta, or eaten on its own to create a less wheat-based carb dish.


Just reading the ingredients on some of those cans makes me question everything- if I cannot pronounce the ingredient or have no idea what it is, why am I putting it into my body? Those cans are filled with monosodium glutamate (aka MSG), and natural flavoring. Natural flavoring has always made me pretty hesitant. The word "natural" typically invokes a positive reaction in people, thinking they are making a healthy choice. However, the FDA's definition of what can be in natural flavoring is very very vague. Their only guidelines are that these flavoring components must be from natural sources such as plants or animals and cannot be created in a lab. They can however be a mixture of the weirdest things as long as they occur naturally. If you have food allergies, this could include animal or egg enzymes, dairy enzymes mixed with tree bark. Literally, the term "Natural Flavoring" is so vague and could encompass a wide range of foods. I prefer to eat things that I know exactly what's inside of them.
