Here's the deal. I work a full-time job. I hate spending insane amounts of money on delivery. I am relatively lazy. And I love flavorful and nutritious food. This sheet pan sausage, peppers, and cauliflower gnocchi is the dump-and-go recipe of your dreams. It takes less than 5 minutes to slice the sausage, chop the peppers and dump everything on a sheet pan. As everything is roasting in the oven, I usually will go upstairs and change into my pajamas and still have a few minutes to spare. I take a large plateful of the sausage, peppers, and cauliflower gnocchi and plop down on the couch to watch 90-day Fiance while I am stuffing my face. This is the quickest, easiest, flavorful, guilt-free weeknight dinner that the whole family will love!
Can we all agree that Trader Joe's Cauliflower Gnocchi is the MVP we never knew we needed (all while making your house smell like farts)? I personally love them because they're an easy way to sneak in some extra veggies without realizing you're eating veggies! Alternatively, this can be made with potatoes- I would just suggest parboiling (tossing them in boiling water for like 5 minutes) before adding them to the sheet pan to make sure they cook all the way through- there's nothing worse than an undercooked potato.

Sausage
I love using a hot/spicy sausage for this! Uncooked sausage works best for this as it cooks with the rest of the ingredients and won't dry out
I would recommend one sausage and one pepper per person
Bell Peppers
Cauliflower Gnocchi
I used Trader Joe's Cauliflower Gnocchi from the freezer section for this recipe! Do other brands even make Cauli Gnocchi?!
Straight out of the freezer! No need to thaw!
Italian Seasoning
I used the Trader Joe's Italian Soffrito for this recipe but any Italian seasoning would work perfectly!
Oil
**You can also add sliced onion to the sheet pan as well- I was fresh out of onion when i was developing this recipe! Hey, I am still new at this food blogging thing!
Tips for recipe success
Shake the pan halfway through cooking! Open up the oven door with an oven mitt on and give the sheetpan a hefty shake to help all sides brown and crisp!
Don't put too much thought into it! Cooking is a pretty forgiving skillset- throw a little bit of this and a little bit of that and things usually turn out okay! Use whatever you have on hand! Have broccoli you want to use? Throw it on there!
If you don't want your house to smell like farts- the cauliflower gnocchi can be easily swapped out for potatoes! I would recommend parboiling the potatoes (boiling them in water for like 5 minutes) before transferring them to the sheetpan to make sure they cook all the way through!
Chop all ingredients beforehand to make for an easy after work dump and go recipe!
Honestly, the only way you could mess up this recipe is if you accidently left it in the oven for three hours as opposed to the 20-30 minutes the recipe calls for
