Sheet Pan Tomato Soup


New to making soup? Consider this recipe your training bra of soup making! It requires no standing over the stove stirring for hours- all you need is an oven and a blender! I can't be the only one who was absolutely intimidated by making soups. They seemed so complex, unattainable, and not worth the time that you had to put in. Boy, was I wrong!

Soups are honestly one of the most simple comfort foods to eat! This recipe truly is one of the easiest things you'll ever make! It is made of whole fresh ingredients that are vegetarian, vegan, family friendly and quick and easy! This recipe will make the most inexperienced cook feel like they know their way around the kitchen!



 

Ingredient Breakdown



  • Cherry Tomatoes- LOTS of them! I used 4, 10 oz cartons (they were only $2 each!)

  • Onion

  • Garlic

  • Balsamic Glaze OR Sugar (to balance out the acidity of the tomatoes)

  • A spoonful of Pesto (optional)

  • Oil

  • Salt

Toppings & Add ons (optional)

  • Grilled Cheese- duah!

    • I made a grilled cheese, cut it into cubes and toasted it a little further to create the perfect grilled cheese croutons!

  • Parmesan

  • Basil
