TUNA!!!!! Tuna is one of my favorite convenience foods that I have never brought into the office for lunch. Despite the smell, what isn't there to love about tuna? You can do so much with tuna- tuna salad, tuna melts, tuna cakes, or eat it straight out of the can with a fork! I know I can't be the only one who always has an arsenal of cans of tuna in their pantry- you never know when you may need it. This BEST EVER Smoky Chipotle Tuna Salad comes together in not even 5 minutes, pescetarian, keto-friendly, family-friendly, and insanely addicting!
My husband introduced me to this variation of tuna salad. Being very caucasian in a country that prides itself on casseroles with 6 different canned products in them, I had only ever had a very standard tuna salad, tuna, mayo, and not much else. My husband, being from Mexico was whipping up some tuna salad as a snack for himself one afternoon (a rarity) and pulled out a can of chipotles and some limes... I had no idea what in the heck he was doing- the written laws of tuna salad are just plain mayo, tuna, and maybe some onions, right? Like any self-discovery, everything I thought I knew about tuna salad was flip turned upside down.
Let me tell you why this works SO WELL. I always go back to the concepts of Samin Nosrat in her book Salt Fat Acid Heat - an absolute MUST READ if you're interested in cooking (or you can just check out her series by the same title on Netflix). In her book, she breaks down the four basic elements of good cooking. Salt is there to enhance flavor, fat amplifies flavor, acid balances and brightens flavor, and heat helps determine texture. While this recipe does not utilize heat in any way, it has the top three flavor-enhancing ingredients- salt, fat (mayo), and acid (lime juice, red onion, dijon, & chipotle peppers). These ingredients balance themselves so well that you'll never know why you didn't try this combo earlier! The perfect recipe for the most delicious, quick, and easy meal.
Ingredient Breakdown for Smoky Chipotle Tuna Salad
2 12 oz can of tuna
1/4 cup mayo (check out how I make my super easy DIY mayo on our Instagram Story highlights!)
1 can of Chipotle Peppers in Adobo Sauce- this is usually found in the Hispanic section of the grocery store and can be found in a ton of different varieties! This is one of my favorite flavor-enhancing ingredients, I always have a few cans on hand to throw in tacos, marinades, or tuna salad for a nice smoky, spicy kick!
Juice from 2 limes
1 tbsp dijon mustard
1/4 red onion
Salt & Garlic Powder
