Flaky Spinach and Artichoke Puffs with Feta Dipping Sauce



This recipe is as basic as a white girl with Ugg boots and a Pumpkin Spice Latte on the first day of October. Is there anything better than the classic flavor combination of spinach and artichoke? Sometimes I will eat artichoke hearts straight from the can because I feel like it! I have always been intimidated with anything baking-related but I dreamed up this puffy, flaky appetizer that I knew I needed to find a way to create it! Traditionally anything spinach and artichoke includes a ton of dairy- cheese, cream cheese, sour cream, etc. I wanted to find a way to lighten up this classic without a ton of dairy (I'm just out here trying to save all the tummies in the world)! These are surprisingly pretty filling as well! I don't know if it is because each one pack in a healthy balance of protein, fiber, and fat or if it's because they're just so satisfying! These will be a family favorite to serve up at Thanksgiving!


All you need is a food processor, store-bought puff pastry, and a couple of simple ingredients to whip up this super simple Spinach and Artichoke with a feta dipping sauce!






 



Ingredient Breakdown

  • Spinach

  • Canned or Jarred Artichoke Hearts

  • Garlic

  • Shallot

  • Frozen Puff Pastry- I got mine from the Trader Joe's freezer section- it's an all-butter puff pastry and is SO SO good and easy to work with

  • Feta Cheese

  • Lemon

  • Water

  • Egg for eggwash
