Strawberry Lemonade Upside Down Pie Bites | Easy Summer Recipe | No Bake

Heyyy blog friends!! It has been a minute since I posted something!!! It has been a crazy month and I really did not expect it to be so crazy! A little bit about what is happening, my sister graduated college and I made her a dessert for it but did not like the photos so I decided not to put them out there. Since then, I was struggling with ideas for a bit- just the change in seasons causes that sometimes. Also, a birthday party to attend. The biggest thing that has consumed my life is MOVING. One month ago I had no furniture to my name and now my room and everything is fully furnished. You never know how much time that is going to consume until you actually try and find the furniture that you like. So I fully apologize for being MIA and I am back now!!

Another thing that I have been struggling with since becoming busier is time management and I think from after a year of having no plans and then having so many lined up again, I need to buy a planner again... So I already put in that Amazon order and I am ready to take on this summer!

Anyways- the reason you came to this post is for these delicious strawberry lemonade bites!! These are not like any of my other posts and do contain dairy and gluten-however, I used the low calorie versions of cream cheese and whipped topping. These strawberry lemonade upside down pie bites will keep you coming back for more all summer long. So easy to make and kept fresh because you just keep them in the freezer! These treats are the perfect option for any hot summer day or night!

INGREDIENTS

  • Cream cheese

  • Sweetened condensed milk

  • Whipped topping

  • Strawberries

  • Lemon juice

  • Graham crackers

  • Butter (I used vegan but it does’t matter)

Above are some of the ingredients that I used!

Important steps:

  • Blend the strawberries in a blender so they are liquid

  • These will melt if left out-just warning!
